Potato pancakes

Just plain leftover mashed potatoes can be boring after a while, so making them into potato pancakes is a delicious way to add something special to a meal.

Take 4 cups or so of cold mashed potatoes and mix with an egg and 1/4 cup flour. Grease a griddle or frying pan with your fat of choice (in this case I used bacon grease) and dollop on the mixture and flatten:



Flip the pancake over once the one side is golden brown and delicious and allow the other side to fry.

If you have lots, simply transfer the finished potato cakes to a plate and finish cooking the rest.



For this meal I used the potato pancakes to make leftovers a little more special



Don't worry if you end up with leftover potato pancakes. Simply let them cool on a wire rack and then slide them into a ziplock freezer bag and stash in the freezer. They are very good heated up in the microwave for a quick and easy breakfast treat or dinner side dish.
